Mil Terpanjang: Saat Jarak Menjadi Bahan Tak Terlihat di Setiap Makanan Sekolah
Oke, kita udah bahas soal jam produksi. Udah bahas soal suhu makanan. Sekarang ada satu lagi yang bikin gw mikir: jarak.
Jadi gini. Bayangin SPPG (Satuan Pelayanan Pemenuhan Gizi) itu kayak dapur sentral. Mereka masak ribuan porsi. Terus makanan itu harus dikirim ke puluhan, bahkan mungkin ratusan sekolah.
Pertanyaannya: seberapa jauh jaraknya?
Gw awalnya mikir, "Ya jarak mah nggak masalah. Yang penting makanan sampe." Tapi makin gw pikirin, makin gw sadar: jarak itu bukan sekadar angka di peta.
Jarak itu adalah waktu. Dan waktu, seperti yang udah kita bahas, adalah musuh keamanan pangan.
Coba lo bayangin rantainya:
- Makanan selesai dimasak di SPPG.
- Dikemas ke dalam wadah.
- Dimuat ke kendaraan.
- Perjalanan dari SPPG ke sekolah.
- Sampai di sekolah, diturunin.
- Dibagi ke kelas-kelas.
- Anak-anak antri, ambil makanan.
- Makan.
Itu banyak banget langkah. Dan di setiap langkah, ada risiko.
Kalo jarak SPPG ke sekolah deket — misalnya 5-10 menit — ya risiko lebih kecil. Tapi kalo jauh? Macet? Jalan rusak? Kendaraan mogok?
Gw jadi kepikiran, di kota-kota besar kayak Jakarta, macet bisa berjam-jam. Makanan yang udah dikemas jam 8 pagi, baru sampe sekolah jam 11 siang. Itu selisih 3 jam hanya untuk perjalanan. Belum termasuk waktu pengemasan, pemuatan, dan pembagian.
Dan di perjalanan itu, makanan berada di dalam kendaraan. Apakah kendaraannya berpendingin? Apakah wadahnya bisa menjaga suhu? Atau cuma pakai mobil biasa dengan makanan di dalam styrofoam?
Gw bukan ahli logistik, tapi gw cukup sering beli makanan online. Dan gw tau, makanan yang dikirim 30 menit aja udah berubah rasa dan teksturnya. Apalagi 3 jam.
Tapi di sisi lain, gw juga nggak mau langsung nyimpulin "berbahaya." Soalnya, kalo sistemnya bagus, risiko itu bisa diminimalisir.
Misalnya:
- Pake kendaraan berpendingin (cold chain)
- Atau kendaraan dengan wadah isolasi yang bisa menjaga suhu panas (hot chain)
- Ada SOP yang ketat untuk pengemasan dan pemuatan
- Ada monitoring suhu selama perjalanan
- Jadwal distribusi diatur agar makanan nggak nunggu terlalu lama di sekolah
Kalo semua itu jalan, jarak 20-30 kilometer pun masih aman.
Tapi kalo nggak ada itu semua, jarak 5 kilometer pun bisa jadi masalah.
Gw jadi inget waktu masih kerja di proyek yang melibatkan distribusi ke banyak lokasi. Gw pikir "deket" itu aman. Ternyata, lokasi yang deket tapi aksesnya susah — macet, jalan sempit, antrian — malah lebih lama sampe daripada lokasi yang jauh tapi pake jalan tol.
Jadi jarak itu nggak cuma soal berapa kilometer. Tapi soal berapa menit dalam kondisi apa.
Dan satu hal yang bikin gw mikir: anak-anak di sekolah biasanya mulai makan sekitar jam 9-10 pagi. Kalo makanan datang jam 11, itu udah telat. Anak-anak laper. Tapi kalo makanan datang lebih awal, misalnya jam 8, terus harus nunggu sampe jam 10 buat dimakan — itu juga masalah.
Soalnya makanan yang udah diantar lebih awal, tapi belum dimakan, tetap harus dijaga suhunya. Dan di sekolah, nggak semua punya peralatan untuk menjaga makanan tetap panas atau dingin.
Jadi, rantai distribusi ini panjang dan rapuh.
Gw bukan bilang program ini pasti gagal. Gw cuma bilang, kompleksitasnya sering diremehkan.
Orang liat "masak 3.000 porsi" dan mikir, "Ya tinggal masak aja banyak-banyak." Padahal, di balik itu, ada logistik yang butuh perencanaan matang, peralatan yang sesuai, dan tim yang terlatih.
Gw cuma berharap, setiap SPPG punya rencana distribusi yang nggak cuma di atas kertas. Tapi yang bener-bener diuji di lapangan. Karena kalo cuma di atas kertas, anak-anak yang jadi korban.
Dan satu lagi. Gw jadi mikir, kadang hal-hal kayak gini nggak kelihatan dari luar. Orang tua kirim anak ke sekolah, percaya makanan yang disediakan aman dan bergizi. Mereka nggak mikirin rantai distribusi, suhu kendaraan, atau waktu perjalanan.
Mereka cuma percaya.
Dan kepercayaan itu, menurut gw, harus dijaga dengan sistem yang bener-bener kerja. Bukan cuma janji.

The question is: how far are they?
I initially thought, "Distance doesn't matter. As long as the food arrives." But the more I think about it, the more I realize: distance isn't just a number on a map.
Distance is time. And time, as we've discussed, is the enemy of food safety.
Just imagine the chain:
- Food finishes cooking at the central kitchen.
- It's packed into containers.
- Loaded onto vehicles.
- Travel from central kitchen to school.
- Arrives at school, gets unloaded.
- Distributed to classrooms.
- Kids line up, take their food.
- They eat.
That's a lot of steps. And at every step, there's risk.
If the distance from the central kitchen to the school is short — say, 5-10 minutes — the risk is smaller. But what if it's far? Traffic? Bad roads? A broken-down vehicle?
I started thinking about big cities like Jakarta. Traffic jams can last hours. Food packed at 8 AM might not reach the school until 11 AM. That's a 3-hour gap just for the journey. Not including packing, loading, and distribution time.
And during that journey, the food is inside a vehicle. Is the vehicle refrigerated? Can the containers maintain temperature? Or is it just a regular car with food in styrofoam boxes?
I'm not a logistics expert, but I've ordered food delivery often enough. And I know that food delivered in 30 minutes already changes in taste and texture. Imagine 3 hours.
But on the other hand, I don't want to immediately conclude it's "dangerous." Because if the system is good, those risks can be minimized.
For example:
- Using refrigerated vehicles (cold chain)
- Or vehicles with insulated containers that can maintain hot temperatures (hot chain)
- Having strict SOPs for packing and loading
- Monitoring temperature during the journey
- Scheduling distribution so food doesn't wait too long at the school
If all of that works, even a 20-30 kilometer distance can still be safe.
But if none of that exists, even a 5-kilometer distance can be a problem.
I remember when I was working on a project that involved distribution to multiple locations. I thought "close" meant safe. Turns out, a location that's close but has difficult access — traffic, narrow roads, queues — can take even longer to reach than a location that's farther but accessible via highway.
So distance isn't just about how many kilometers. It's about how many minutes, under what conditions.
And one thing that struck me: kids at school usually eat around 9-10 AM. If the food arrives at 11 AM, that's already late. The kids are hungry. But if the food arrives earlier, say 8 AM, and then has to wait until 10 AM to be eaten — that's also a problem.
Because food that arrives early but isn't eaten yet still needs to be kept at the right temperature. And schools don't all have equipment to keep food hot or cold.
So this distribution chain is long and fragile.
I'm not saying this program will definitely fail. I'm just saying that its complexity is often underestimated.
People see "cooking 3,000 portions" and think, "Just cook a lot." But behind it all, there's logistics that require careful planning, appropriate equipment, and a trained team.
I just hope every central kitchen has a distribution plan that's not just on paper. But one that's actually tested in the field. Because if it's only on paper, the kids are the ones who suffer.
And one more thing. I started thinking, sometimes things like this aren't visible from the outside. Parents send their kids to school, trusting that the food provided is safe and nutritious. They don't think about the distribution chain, vehicle temperature, or travel time.
They just trust.
And that trust, in my opinion, must be upheld by a system that actually works. Not just promises.
