Oke, kita lanjut lagi bahas MBG. Kali ini gw mau ngomongin soal peralatan. Karena kemarin kita udah bahas soal waktu produksi, dan ternyata 3.000 porsi itu nggak bisa dianggap remeh. Nah, sekarang gw penasaran: alat apa aja sih yang dibutuhkan buat masak sebanyak itu?
Banyak orang mungkin mikir, "Ah, yang penting kompornya banyak."
Eits, nggak segampang itu, bray.
Kalau cuma kompor, ya bisa aja punya 10 kompor. Tapi apakah itu cukup? Ternyata, masalahnya lebih kompleks dari sekadar jumlah kompor.
Mari kita bedah.
Lebih dari Sekadar Kompor
Bayangkan kita mau masak nasi buat 3.000 orang. Nasi. Salah satu makanan yang paling sederhana. Tapi coba pikir: beras 3.000 porsi itu berapa kilo? Kalau 1 porsi 100 gram beras, totalnya 300 kilo beras. Tiga ratus kilo.
Beras 300 kilo itu nggak bisa dimasak pakai rice cooker rumah tangga. Butuh rice steamer atau dandang besar dengan kapasitas puluhan kilo per batch. Dan itu nggak cuma satu. Mungkin perlu 5-10 unit tergantung kapasitasnya.
Lalu, mencuci 300 kilo beras butuh tempat cuci yang besar. Bukan wastafel kecil di dapur rumah. Butuh bak pencucian industri dengan air mengalir yang cukup. Dan tempat untuk meniriskan.
Belum lagi area persiapan. Tempat untuk memotong ayam, mengiris sayur, menghaluskan bumbu. Semua butuh meja stainless steel yang luas. Bukan meja kayu kecil di dapur ibu-ibu.
Nah, sekarang bayangkan ayamnya. 3.000 porsi ayam. Kalau 1 porsi 100 gram ayam, totalnya 300 kilo ayam. Tiga ratus kilo daging ayam. Itu harus dipotong, dicuci, dimarinasi, lalu digoreng atau dipanggang.
Butuh wajan besar (wok industri) atau deep fryer dengan kapasitas besar. Butuh oven atau pemanggang kalau mau dipanggang. Butuh blender atau food processor besar buat bumbu. Butuh kulkas atau cold storage buat nyimpen bahan mentah sebelum diolah.
Dan ini baru lauk. Belum sayur dan buah.
Sayur 3.000 porsi juga butuh dicuci, dipotong, ditumis atau direbus. Butuh panci besar (stock pot) buat merebus atau wajan besar buat menumis. Buahnya? Buah harus dicuci, dikupas (kalau perlu), dan dipotong. Itu juga butuh tempat dan alat.
Setelah semua matang, ada area pemorsian. Tempat untuk membagi makanan ke dalam porsi-porsi. Ini butuh meja panjang, timbangan, dan wadah-wadah. Bayangkan 3.000 porsi harus ditata. Nasi, ayam, sayur, buah, masing-masing masuk ke tempatnya. Ini butuh ruang yang luas.
Lalu area pengemasan. Makanan yang udah diporsi harus dikemas. Pakai wadah plastik, kotak makanan, atau apa pun. Terus disusun di rak atau troli buat siap distribusi.
Belum lagi tempat penyimpanan bahan baku. Beras, bumbu, minyak, dan bahan kering lainnya harus disimpan di gudang yang kering dan rapi. Ayam dan sayur di cold storage.
Dan yang nggak kalah penting: jalur distribusi. Makanan yang udah dikemas harus segera diangkut ke sekolah-sekolah. Butuh kendaraan, butuh kemasan yang tahan perjalanan, butuh koordinasi.
Nah, kalau semua ini dihitung, dapur 3.000 porsi itu bukan dapur biasa. Ini dapur skala industri. Ini seperti central kitchen yang biasa dipakai oleh perusahaan katering besar atau restoran rantai.
Dokumen Teknis dan Realitas di Lapangan
Mungkin ada dokumen teknis yang bilang, "Untuk produksi 3.000 porsi dibutuhkan 5 kompor high pressure." Oke, mungkin itu benar. Tapi jumlah kompor saja nggak cukup buat jadi bukti bahwa 3.000 porsi bisa selesai dalam waktu tertentu.
Kenapa? Karena kapasitas setiap alat berbeda. Ada kompor yang bisa masak 10 kilo ayam dalam satu batch, ada yang cuma 5 kilo. Ada dandang yang bisa masak 50 kilo beras, ada yang cuma 20 kilo. Kalau alatnya kecil, ya harus masak berkali-kali (batch). Dan itu makan waktu.
Belum lagi jumlah tenaga kerja. Masak 3.000 porsi nggak bisa dilakukan sendirian. Butuh tim. Ada yang bagian cuci, potong, masak, porsi, kemas. Masing-masing butuh orang. Kalau tenaga kerja kurang, ya prosesnya molor.
Layout dapur juga penting. Bayangkan kalau area cuci jauh dari area masak. Orang harus bolak-balik bawa bahan basah. Itu buang waktu. Atau kalau area masak jauh dari area pemorsian. Makanan yang udah matang harus dipindah-pindah, risiko kontaminasi, dan waktu terbuang.
Alur perpindahan bahan dan makanan matang juga harus dirancang dengan baik. Ini yang disebut flow process dalam dunia industri. Bahan mentah masuk dari satu sisi, diproses, dimasak, diporsi, dikemas, dan keluar dari sisi lain. Kalau alurnya berantakan, ya dapur jadi kacau.
Jadi, kalau cuma lihat jumlah kompor, itu belum cukup buat menilai apakah dapur tersebut mampu memproduksi 3.000 porsi dengan efisien.
Dapur Skala Besar Itu Berbeda
Gw mau kasih gambaran. Dapur rumah tangga biasa punya 1-2 kompor, 1 rice cooker, 1 kulkas kecil, dan beberapa panci. Itu cukup buat masak buat 4-5 orang.
Dapur kantin sekolah mungkin punya 3-4 kompor, rice cooker besar, dan kulkas sedang. Itu cukup buat masak 50-100 porsi.
Tapi dapur 3.000 porsi? Itu central kitchen. Itu punya:
- Rice steamer kapasitas besar (bisa 50-100 kg per batch)
- Deep fryer atau wok industri besar
- Oven atau pemanggang skala besar
- Blender dan food processor industri
- Cold storage atau kulkas besar

Ini bukan dapur biasa. Ini pabrik makanan.
Dan semua alat ini harus diatur dengan layout yang efisien.
Gw inget cerita dari temen yang pernah magang di central kitchen sebuah hotel besar. Katanya, dapur itu luas banget. Ada jalur khusus buat bahan mentah, jalur khusus buat makanan matang, dan jalur khusus buat cuci piring. Semua dipisah biar nggak kontaminasi. Dan semua alatnya besar-besar. Kompornya bukan kompor rumah tangga, tapi range industri dengan 6-8 tungku. Rice cookernya bisa masak 100 kg beras sekaligus. Kulkasnya sebesar kamar.
Nah, kalau SPPG mau produksi 3.000 porsi, ya harus punya fasilitas kayak gitu. Nggak bisa setengah-setengah.
Implikasi Biaya dan Perencanaan
Ini yang bikin gw mikir. Kalau peralatannya sebesar itu, berapa biaya investasinya? Satu central kitchen dengan semua peralatan itu nggak murah. Bisa ratusan juta, bahkan miliaran.
Belum lagi biaya perawatan, biaya operasional (listrik, gas, air), dan biaya tenaga kerja.
Kalau pemerintah mau membangun SPPG di banyak tempat, biayanya pasti sangat besar. Dan itu harus dihitung dengan matang. Jangan sampai anggaran udah disiapkan, tapi ternyata nggak cukup buat beli peralatan yang memadai. Akhirnya dapur SPPG cuma punya peralatan seadanya, dan produksi jadi nggak efisien.
Atau lebih parah: peralatan udah dibeli, tapi nggak sesuai kebutuhan. Misalnya, rice cooker yang dibeli kapasitasnya terlalu kecil, jadi harus masak berkali-kali. Atau kompornya nggak cukup kuat buat menggoreng 300 kilo ayam dalam waktu singkat. Itu semua bikin proses molor dan kualitas makanan turun.
Gw jadi inget proyek-proyek pemerintah sebelumnya yang gagal karena perencanaan peralatan yang asal-asalan. Ada program bantuan alat pertanian yang alatnya nggak cocok dengan kondisi lahan. Ada program bantuan komputer yang speknya terlalu rendah buat kebutuhan sekolah. Semua itu pemborosan.
Semoga SPPG nggak jadi cerita yang sama.

Sebenernya, kita nggak perlu nebak-nebak. Industri katering udah punya pengalaman puluhan tahun dalam produksi makanan skala besar. Mereka tahu persis peralatan apa yang dibutuhkan, berapa kapasitasnya, dan bagaimana mengaturnya.
Kalau pemerintah serius mau menjalankan program ini, sebaiknya belajar dari praktik terbaik di industri katering. Konsultasi dengan ahli dapur industri. Pelajari standar peralatan untuk produksi 3.000 porsi. Hitung biaya investasi dan operasionalnya dengan cermat.
Jangan cuma bikin dokumen teknis di atas kertas tanpa melihat realitas di lapangan. Karena dokumen bisa bilang apa saja, tapi realitas nggak pernah bohong.
Gw bukan ahli dapur industri. Tapi gw cukup logis buat tahu bahwa masak 3.000 porsi itu perlu persiapan serius. Nggak bisa cuma modal niat baik dan kompor banyak.
Ada banyak hal yang harus dipersiapkan. Peralatan, tenaga kerja, tata ruang, alur produksi, dan masih banyak lagi.
Dan semua itu butuh uang, waktu, dan perencanaan yang matang.
Kesimpulan yang Masih Menggantung
Jadi, gimana? Apakah SPPG siap?
Gw nggak tahu. Gw cuma bisa berharap para perencana di sana udah memikirkan semua ini. Tapi kalau belum, ya ini PR besar.
Yang jelas, jangan sampai kita membangun SPPG dengan peralatan yang nggak cukup, lalu hasilnya makanan nggak layak, dan anak-anak jadi korban.
Kita lagi ngomongin masa depan anak-anak. Ini serius. Nggak bisa main-main.
Semoga aja semua udah dihitung dengan baik. Tapi kalau belum, ya, kita harus bertanya. Dan terus bertanya sampai ada jawaban yang jelas.

That much rice can't be cooked with a household rice cooker. You need a large rice steamer with a capacity of tens of kilos per batch. And not just one. Maybe 5-10 units, depending on capacity.

And all these tools must be arranged in an efficient layout.

What's clear is that we mustn't build SPPGs with insufficient equipment, resulting in unfit food, and children becoming victims.
We're talking about children's futures. This is serious. No playing around.
Hopefully, everything has been calculated well. But if not, then we must ask. And keep asking until there's a clear answer.
