Gw lagi mikir-mikir soal logistik makanan. Bukan skala kecil ya. Skala gede. Kayak 3.000 porsi gitu.
Pernah nggak sih lo bayangin, buat masak 3.000 porsi makanan, jam berapa lo harus mulai?
Gw awalnya mikir, "Ya 3-4 pagi kali." Ternyata gw salah. Salah banget.
Jadi gini ceritanya. Ada diskusi tentang jadwal produksi makanan buat program makan bergizi. Dan gw sempet ngomong kalo persiapan dimulai jam 3-4 pagi. Kayaknya masuk akal kan? Gw pikir itu udah cukup.
Tapi ternyata, buat 3.000 porsi, jam 3-4 pagi itu cuma waktu buat buka dapur dan terima bahan. Bukan waktu mulai masak.
Bahan-bahan itu perlu dicuci. Perlu dipotong. Bumbu perlu diulek atau diblender. Semua persiapan itu butuh jam. Bukan menit.
Gw mikir, "Okelah, kalo misalnya makanannya mulai disajikan jam 10 pagi, trus persiapan mulai jam 3 pagi, berarti ada 7 jam." Kayaknya cukup kan?
Enggak.
Soalnya jam 3 itu untuk buka dapur. Belum mulai masak.
Kalo proses masaknya buat 3.000 porsi — karena kapasitas alat masak terbatas — harus pake sistem batch. Masak bergelombang. Satu kuali selesai, langsung masuk kuali berikutnya. Dan itu makan waktu berjam-jam.
Jadi kalo makanan mau siap jam 10 pagi, proses masak yang bener-bener masak itu harus udah mulai jam 4 pagi. Atau bahkan lebih awal.
Artinya, jam 3 pagi itu dapur udah harus buka, bahan udah harus diterima, dan tim udah harus mulai ngerjain bahan. Bukan duduk-duduk nunggu.
Dan lo tau apa yang bikin gw tersadar? Ini baru dari sisi produksi. Belum dari sisi distribusi.
Bayangin, makanan yang udah dimasak jam 4 pagi itu harus tetep hangat dan layak konsumsi sampe jam 10 pagi. Atau bahkan lebih lama, kalo distribusinya butuh waktu.
Jadi, sistem pangan skala gede itu bukan cuma soal "memasak banyak." Tapi soal memasak banyak pada waktu yang tepat. Dan itu, ternyata, jauh lebih rumit dari yang gw bayangin.
Gw jadi inget, pernah ada proyek di tempat kerja gw yang melibatkan banyak tim. Deadline-nya jelas, tapi kita lupa ngitung waktu persiapan. Akhirnya semua kerja lembur, capek, dan hasilnya nggak maksimal. Kayaknya logistik dapur ini mirip-mirip gitu.
Kadang, hal yang keliatan simpel di permukaan — "ya tinggal masak aja" — ternyata punya kompleksitas yang nggak keliatan kalo kita nggak pernah ngalamin langsung.
Gw jadi mikir. Buat yang kerja di dapur gede, atau yang ngelola program makan massal, hidup mereka dimulai jam 2-3 pagi. Sementara orang lain masih tidur. Mereka udah berkeringat, ngangkat panci gede, motong bawang, dan ngecek suhu makanan.
Dan semua itu dilakukan biar pas jam 10 pagi, ada ribuan porsi makanan siap disantap.
Gw cuma bisa bilang, salut.
Dan gw juga jadi sadar, kalo gw ngomong soal "jam 3 pagi" itu salah. Yang benar adalah: persiapan dimulai jauh sebelum jam 3 pagi, kalo lo mau makanan siap jam 10.
Entahlah. Mungkin gw yang kebanyakan mikir. Tapi hari ini gw jadi punya perspektif baru soal seberapa berat kerja di balik satu piring makanan.

Have you ever wondered, to cook 3,000 portions of food, what time do you actually have to start?
I initially thought, "Maybe 3-4 AM." Turns out I was wrong. Really wrong.
Here's the story. There was a discussion about production schedules for a nutrition meal program. And I casually mentioned that preparation starts at 3-4 AM. That sounds reasonable, right? I thought that was enough.
But apparently, for 3,000 portions, 3-4 AM is just the time to open the kitchen and receive ingredients. Not the time to start cooking.
The ingredients need washing. They need chopping. Spices need grinding or blending. All that preparation takes hours. Not minutes.
I thought, "Okay, if the meals are served around 10 AM, and prep starts at 3 AM, that's 7 hours." Seems like enough, right?
No.
Because 3 AM is for opening the kitchen. Not yet starting to cook.
If the cooking process for 3,000 portions — given the limited capacity of cooking equipment — has to be done in batches. One pot finishes, the next pot goes in immediately. And that takes hours.
So if the food has to be ready by 10 AM, the actual cooking process has to start at 4 AM. Or even earlier.
That means, at 3 AM, the kitchen already has to be open, ingredients already received, and the team already starting to process the ingredients. Not sitting around waiting.
And you know what made me realize something? This is just from the production side. Not even the distribution side yet.
Imagine, food that's been cooked at 4 AM has to stay warm and edible until 10 AM. Or even longer, if distribution takes time.
So, large-scale food systems aren't just about "cooking a lot." It's about cooking a lot at the right time. And that, turns out, is way more complicated than I ever imagined.
I remember a project at work once. Involved many teams. The deadline was clear, but we forgot to account for preparation time. In the end, everyone worked overtime, got exhausted, and the results weren't optimal. This kitchen logistics thing feels kinda similar.
Sometimes, what seems simple on the surface — "just cook it" — has hidden complexity you don't see unless you've experienced it firsthand.
I started thinking. For those working in big kitchens, or managing mass meal programs, their day starts at 2-3 AM. While everyone else is still sleeping. They're already sweating, lifting giant pots, chopping onions, and checking food temperatures.
And all of that is done so that by 10 AM, thousands of meals are ready to be eaten.
All I can say is, respect.
And I also realized, when I said "3 AM," I was wrong. What's actually true is: preparation starts way before 3 AM, if you want the food ready by 10.
I don't know. Maybe I'm overthinking this. But today, I gained a new perspective on how much work goes into one plate of food.
