Iya, waktu. Berapa lama sih sebenernya yang dibutuhkan buat masak 3.000 porsi makanan?
Gw pernah dengar ada yang bilang, "Ah, masak 3.000 porsi itu cuma butuh 1,5 jam." Gw waktu pertama dengar itu, langsung mikir, "Hah? Serius?"
Emangnya masak 3.000 porsi kayak masak mi instan? Cuma rebus air, tuang bumbu, selesai?
Nggak kayak gitu, bray.
Mari kita bedah pelan-pelan.
Prosesnya Nggak Segampang Itu
Bayangkan kita mau masak menu standar: nasi, ayam, sayuran, dan buah. Kedengerannya simpel, kan? Tapi coba ikuti alurnya.
Pertama, penerimaan dan pemeriksaan bahan. Beras, ayam, sayur, buah, bumbu-bumbu. Semua harus datang, harus dicek kualitasnya. Apakah ayamnya masih segar? Apakah sayurnya nggak layu? Apakah berasnya nggak kutu? Ini butuh waktu.
Kedua, pencucian. Beras dicuci. Ayam dicuci. Sayuran dicuci. Buah dicuci. Semua harus bersih. Bayangkan mencuci 100 kilo beras, 200 kilo ayam, dan puluhan kilo sayuran. Nggak bisa cuma dibilas sebentar. Butuh tenaga dan butuh waktu.
Ketiga, pemotongan. Ayam harus dipotong-potong. Sayuran harus diiris. Bumbu harus dihaluskan. Ini bagian yang paling memakan waktu. Coba bayangkan memotong 200 kilo ayam jadi potongan kecil. Berapa lama? Belum lagi bawang, cabai, kunyit, jahe, semua harus diiris atau diulek.
Keempat, marinasi (kalau perlu). Ayam yang mau digoreng atau dibakar biasanya direndam bumbu dulu biar meresap. Ini bisa butuh waktu 30 menit sampai 1 jam. Atau lebih. Kalau dilewati, ya rasa ayamnya nggak maksimal.
Kelima, memasak. Nasi dimasak di rice cooker atau dandang besar. Ayam digoreng atau dipanggang. Sayuran ditumis atau direbus. Semua butuh waktu dan butuh alat. Dan alat yang dipakai bukan alat rumah tangga. Ini butuh wajan besar, kompor besar, panci besar. Kapasitasnya terbatas. Nggak bisa masak semua sekaligus.
Keenam, pemorsian dan pengemasan. Makanan yang udah matang harus dibagi ke dalam porsi-porsi. Nasi, lauk, sayur, buah, masing-masing masuk ke wadah. Ini juga butuh waktu dan tenaga. Apalagi kalau porsinya harus presisi, nggak boleh kelebihan atau kekurangan.
Belum lagi distribusi setelah dikemas.
Nah, kalau semua proses ini dijumlahkan, menurut gw, 1,5 jam itu sangat tidak realistis.
Jangan salah paham. Mungkin ada yang bilang, "Tapi di restoran cepat saji bisa kan masak banyak dalam waktu cepat?"
Ya beda. Restoran cepat saji punya sistem yang udah terstandarisasi, peralatan industri, dan tenaga kerja terlatih. Itu pun mereka masak dalam jumlah besar dengan bahan yang udah disiapkan (pre-processed). Nggak dari nol.
Kalau SPPG, kita mulai dari nol. Beras mentah, ayam mentah, sayuran mentah. Semua harus diproses dari awal.
Gw jadi inget cerita temen yang kerja di dapur umum buat acara besar. Katanya, buat masak 1.000 porsi aja butuh persiapan dari subuh. Mulai dari jam 4 pagi. Dan itu baru bisa selesai jam 10 atau 11. Itu pun dengan tim yang cukup besar.
Nah, kalau 3.000 porsi, bisa dibayangkan.
Mengapa Estimasi 1,5 Jam Itu Salah?
Mungkin yang ngasih estimasi 1,5 jam itu cuma ngitung waktu cooking doang. Misalnya, ayam digoreng butuh 10 menit per batch. Nasi masak butuh 30 menit. Tumis sayur butuh 5 menit. Lalu dijumlahin. Eh, 1,5 jam.
Tapi mereka lupa sama proses sebelum dan sesudah memasak.
Proses persiapan (pencucian, pemotongan, marinasi) itu seringkali lebih lama daripada proses memasak itu sendiri. Di dapur profesional, ini yang disebut mise en place. Semua bahan disiapkan dulu sebelum api dinyalakan. Dan ini butuh waktu.
Proses pemorsian dan pengemasan juga sering dilupakan. Bayangkan 3.000 porsi harus ditata satu per satu. Nasi, ayam, sayur, buah. Kalau 1 porsi butuh 10 detik, itu udah 30.000 detik alias 8,3 jam. Tentu saja bisa dilakukan paralel dengan tim besar, tapi tetap butuh waktu.
Belum lagi kalau ada masalah. Misalnya ayam kurang matang, sayur keasinan, atau nasi keras. Itu semua bikin proses molor.
Jadi, estimasi 1,5 jam itu terlalu optimistis dan nggak punya dasar data yang cukup.
Gw nggak nyalahin orang yang ngasih estimasi itu. Mungkin mereka nggak pernah terjun langsung ke dapur skala besar. Tapi kalau kita mau serius ngomongin program sebesar ini, kita harus serius juga ngitung waktu dan kapasitas produksinya.
Berapa Waktu yang Realistis?
Nah, ini pertanyaan besarnya. Berapa lama sebenernya?
Gw bukan ahli dapur, tapi dari logika dan pengalaman orang-orang yang pernah di industri katering, produksi 3.000 porsi itu bisa memakan waktu 4-6 jam, bahkan lebih. Tergantung menu, jumlah tenaga kerja, dan peralatan yang tersedia.
Bayangkan ini:
- Jam 4 pagi: tim datang, mulai terima bahan, cek kualitas.
- Jam 4.30: mulai cuci dan potong bahan.
- Jam 5.30: mulai marinasi ayam.
- Jam 6.00: mulai masak nasi.
- Jam 6.30: mulai goreng ayam, tumis sayur.
- Jam 8.00: makanan mulai matang, mulai pemorsian.
- Jam 9.30: pemorsian selesai, mulai pengemasan.

Jadi, kalau distribusi ke sekolah memakan waktu 1-2 jam, maka makanan baru sampai ke tangan siswa sekitar jam 11 atau 12 siang. Itu masih masuk akal buat makan siang.
Tapi kalau harus dimasak dan distribusi dalam waktu lebih singkat? Hmm, itu nggak realistis.
Implikasi untuk Program
Kenapa waktu produksi ini penting? Karena berdampak pada banyak hal.
Pertama, jam kerja tenaga kerja. Kalau produksi butuh 6 jam, artinya tenaga kerja di SPPG harus datang sangat pagi. Mungkin jam 3 atau 4 subuh. Itu berat. Butuh kompensasi dan kesejahteraan yang layak.
Kedua, kualitas makanan. Semakin lama makanan disimpan setelah dimasak sebelum dimakan, semakin turun kualitasnya. Nutrisi berkurang, rasa berubah, risiko kontaminasi meningkat. Jadi, waktu produksi dan distribusi harus seefisien mungkin agar makanan tetap layak saat dimakan.
Ketiga, jumlah SPPG. Kalau satu SPPG hanya bisa memproduksi 3.000 porsi dalam 6 jam, maka kapasitas produksinya terbatas. Untuk melayani lebih banyak siswa, perlu lebih banyak SPPG. Ini berdampak pada anggaran dan infrastruktur.

Jadi, berapa lama waktu yang dibutuhkan untuk memproduksi 3.000 porsi?
Kalau gw harus jawab, gw bakal bilang: minimal 4 jam, dengan asumsi tim yang cukup, peralatan yang memadai, dan proses yang lancar.
Dan itu baru produksi. Belum distribusi.
Kalau ada yang bilang 1,5 jam, gw bakal tanya balik: "Lo udah pernah masak 3.000 porsi? Atau cuma nebak?"
Karena ini bukan soal siapa yang benar atau salah. Ini soal realitas. Dan realitasnya, masak dalam skala besar itu rumit, melelahkan, dan butuh waktu.

I once heard someone say, "Oh, cooking 3,000 portions only takes 1.5 hours." When I first heard that, I immediately thought, "Huh? Seriously?"
Is cooking 3,000 portions like cooking instant noodles? Just boil water, add seasoning, done?
It's not like that, bro.
Let's break it down slowly.
The Process Is Not That Simple
Imagine we want to cook a standard menu: rice, chicken, vegetables, and fruit. Sounds simple, right? But follow the flow.
First, receiving and inspecting ingredients. Rice, chicken, vegetables, fruit, spices. All must arrive, all must be checked for quality. Is the chicken still fresh? Are the vegetables not wilted? Is the rice free from bugs? This takes time.
Second, washing. Rice is washed. Chicken is washed. Vegetables are washed. Fruit is washed. Everything must be clean. Imagine washing 100 kilos of rice, 200 kilos of chicken, and tens of kilos of vegetables. Can't just rinse briefly. It takes labor and time.
